    Egg Noodles With Vegetables

    1/2 bag egg noodles
    1/2 tsp oil
    1 c. olives, sliced
    2 cans drained spinach
    1 c. shredded carrots
    1/2 tsp garlic powder
    2 1/2 c. spaghetti sauce
    1 tsp dried basil
    1 1/2 c. 1% low fat cottage cheese
    1/2 c. low fat sour cream
    1 1/2 c. shredded mozzarella & sliced cheese mix
    1/2 tsp Italian seasoning

    Preheat oven to 350 degrees. Coat a 13x9 baking dish w/ cooking spray. Cook noodles acc'd to package directions. Drain & set aside. Place oil in a large nonstick skillet & place over med-hi heat, add carrots, cook, stirring often, 5-7 minutes. Add olives, spinach, garlic, Italian seasoning & basil, cook additional minute. Combine cottage cheese & sour cream in a small bowl. For first layer, spread 1/3 of veggie sauce mixture in bottom of prepped baking dish. Arrange 1/3 of the noodles on top of sauce. Spread 1/3 of cottage cheese mixture on noodles. Top with 1/3 of sauce mixture, then 1/3 c. cheese. Repeat two more times ending with cheese. Bake 25 to 30 minutes or until hot. Remove from oven & let stand 10 minutes before serving. Serves 8.
