    Peanut Butter Cookies

    Classic Peanut Butter Cookies

    Original recipe makes 4 dozen

    Ingredients

    1 cup unsalted butter
    1 cup crunchy peanut butter
    1 cup white sugar
    1 cup packed brown sugar
    2 eggs
    2 1/2 cups all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 1/2 teaspoons baking soda

    Directions

    Cream together butter, peanut butter and sugars. Beat in eggs.

    In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.

    Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.

    I tried these about a week ago & they were GREAT! I'm wondering if it was a different recipe because I believe it only asked for 1 egg instead of 2. I had to borrow egg from neighbor & his eggs were so tiny he had me take 2.

    I did make this very recipe last night. You can roll the dough into little balls right off the bat so I did. My first pan came out flat as a pancake, slightly burned & quite hard/crunchy. I both put the dough in the fridge a while & also pulled them out quicker so the 2nd & 3rd pans came out much better & I still have dough left.

    On the site where I got this people can leave comments & several have. One lady added 1/2 c. more flour, 1/2 c. more peanut butter & 1 tsp. vanilla. Another one added 1/4 c. more flour, 1/4 c. more peanut. And yet another one claimed her family LOVES peanut butter so she added 1 c. more peanut butter & 1 tsp vanilla. Also some people cooked @ 350 for only 7-8-9 min.
