    Pumpkin Parfait

    1 can (about 15 oz) low dosium pumpkin
    3 c. fat free or low fat vanilla yogurt
    1/4 tsp ground cinnamon
    1/4 tsp ground nutmeg


    1/4 c. raisins
    1/2 c. quick cooking oats
    1/2 c. rice crisps
    1 tbsp vegetable oil
    1/4 c. brown (or white) sugar

    In a blender or w/ a fork, blend the pumpkin until smooth.

    Mix pumpkin, yogurt & spices in a bowl.

    In another bowl, mix the granola ingredients until well blended.

    Spread granola on baking pan. Bake @ 325 degrees F. for 10 min.

    Let the granola cool down until it hardens. Then break apart or crush into small pieces.

    Spoon a portion of the pumpkin into 6 med. size glasses or bowls.

    Put granola on top of the pumpkin in each glass or bowl. Continue spooning the pumpkin & granola in layers until all have been added.

    Serve immediately or refrigerate.
