    Mac & Beans Medley

    4 garlic clove
    1 bell pepper
    2 tbsp oil
    1 can tomatoes (14-15 oz, diced)
    1 can beans (14-15 oz, black, kidney, pinto or other, drained & rinsed)
    1 tsp red pepper flakes (crushed)
    2 c. macaroni (cooked, without salt or fat added or other pasta)

    Peel & finely chop the garlic. Core, seed, & finely chop the bell pepper.

    Heat oil in large skillet over med-high heat. Add garlic & bell pepper. Cook for one minute. Do not let garlic brown. Add diced tomatoes (do not drain) & red pepper flakes.

    Cover the skillet & lower heat. Cook for 10 min. or until sauce is slightly thickened.

    Add beans & cooked macaroni to skillet & cook 5 min. or until heated through.

    Serve hot.
